Kerala Sambar
Sambar is an important part of the staple diet in south Indian kitchen prepared since ages . It is a mix of lentils, vegetables, spices served hot with steaming rice, idlis, wadas.Every region of South India has a unique recipe to prepare sambar . Ingredients: Vegetables: potatoes, tomatoes, eggplant, okra and carrot are some examples but you can add any veggies you like Lime-sized tamarind, soaked in warm water 1 cup toor dal, pressure cooked with turmeric and mashed Ground coconut (fried) Sambar Masala red dried chilies Method: Cook the potatos and onion pieces in a pressure cooker. Once the potatoes are cooked, open the cooker and add already cooked dal. Now add the other vegetables, Sambar masala and tamarind water. Cook this for 10 minutes, add chilli powder for taste and salt as per your requirements. Add the ground coconut. Add oil in a pan and add mustard seeds, cumin seeds, and curry leaves. Once the mustard seeds start bursting, pour the already cooked sambar to this and cook for some time on low heat; an hour if you have it will ensure that the flavours infuse the dish completely. Serve when cooked through. The sambar is perfect to serve with rice, or dosa or iddly. |
